A family-run business in Fenland is expanding to open a new sandwich shop in March. 

Emma Cole, who runs Cole's Kitchen hot food van at Meadowlands Retail Park, is taking on the former Teal Café in Station Road. 

Cole's Sandwich Bar will be officially opened by Emma's friend, famous YouTuber Trucker Tim, at 10am on Monday March 11.

A 'dinosaur' from Fossils Galore in town will also be in attendance, and there will be canapes. 

Emma, who has been test baking some cakes and pastries ready for the opening, said: "Because the van has gone quite well, I'm opening a proper old-fashioned sandwich bar, where all the fillings are in front of you. 

"There will be cakes too, and hopefully we can offer other local cake-makers a place to display and sell their own.

"The aim is to try and bring the community together," she added. 

"Especially with everything that's going on in town, it's nice to see new business and existing business coming together to show that the town can still thrive."

Emma added that she is "confident" about the new venture: "We do well with the van and hopefully the name will follow me to the shop. 

"If people want good food, they'll travel for it, hopefully. Plus, because of where we will be located, we can cater for both sides of the town."

 She added that the van will "stay the same with the same opening hours and the same lovely team".

Cole's Sandwich Bar will be open from 6.30am to 2pm from Monday to Saturday.

The new signage is due to arrive next week.
